We start with a straight Bourbon with enough rich sweetness to balance the spice and grain of an aged 95/5 straight rye whisky. We then blend each batch to achieve a consistent flavor profile that brings out the best of both spirits. The result is a 4-grain whisky that cannot be achieved with a 4-grain mash bill. As the spirits age separately, the grains draw different compounds from the oak achieving their unique flavors. When blended, we achieve an unparalleled robustness.
BATCH No. 3 Tasting Notes
Batch 3 is a 9-yr straight Bourbon and 6-yr straight rye blend. On the nose, honey, plum, cinnamon, apple, and raisins. A powerfully delicious flavor on the palate with rich sweetness of caramel, light tree fruits especially Honeycrisp apple, brown sugar, and an incredible smoothness. The finish is warming with hints of mocha, nuts, and malt.
